Baked Red Snapper
Red snapper is one of the tastiest fish in the Caribbean; you can purchase this at your local fish market. It can weigh in at up to 20lb but is usually found weighing about 6-8lb. The ones we see in England however are smaller!
BAKED RED SNAPPER serves 6
- 6 Red snappers Juice of 1 lime
- 3 Red onions sliced 4 fresh vine/beef tomatoes chopped,
- 6 Chive blades chopped 2 Garlic cloves crushed
- 11/4 pints Milk 3 tbsp flour
- 11/2 tbsp butter Fresh salt and pepper
Sprinkle the snapper with salt and rub well with the lime. Place the snapper in a lightly greased baking dish and surround them with the onion, tomato, chives and garlic.
Gradually add the milk into the flour, a little at a time, stirring to keep it smooth. Add the butter, salt and pepper to the sauce and then pour it over the fish.
Bake uncovered a 350f, 180c or Gas mark 4 for about 50 minutes until the fish is cooked and lightly browned on top.
Serve with a tossed fresh green salad in Yabba Roasted Red Pepper dressing and fresh bread.
Fish is a good source of vitamins and minerals its easily digestible and is said to be great for lifting depression when enjoyed on a regular basis.
