Johnny Cakes - Fried Dumplings
- 1lb Plain flour
- 2 tsp baking powder
- 1 tsp salt
- 1oz butter
- Sunflower for frying
Sift together the flour, baking powder and salt. Mix in the butter and add enough water to make a stiff dough. Shape into 2 inch balls and deep fry them in moderately hot oil until they are golden brown.
Delicious with butter and are usually served at breakfast with escoveitch fish, or as a light meal with vegetables or meat curry.
